Domaine Gérard Thomas Saint-Aubin Blanc 1er Cru 2021
Wow this beauty of a wine did not disappoint!
Drank young, but the acidity was palpable, as was the fruit, and so I expect, even though it's most likely designed to be drunk young, you could hang onto this longer. If you can 😂
1. Hand harvested grapes - selecting the most ripe whole bunches at a time - avoiding oxidation, keeping the grape juices fresh! 🍇🍇🍇
2. Barrel fermented with 25% new oak used. Ten months in cask follows, with regular lees stirring to add depth. (Vanilla from the oak, along with some nuttiness, butter from the malolactic fermentation, and biscuits and bread from the lees. Although in this case - I was claiming a hint of salty butter popcorn 🍿🍿🍿 yummy 😋)
3. This wine was a bit of a journey.
What hit me at first was - minerals on the nose, steely, flinty....
Then citrus flavours 🍋....as usual not a lot until I tasted it then...
Lime, peach, hint of nectarine, it continued to develop over time and as it heated up in the glass.
Second glass - slightly salted butter popcorn 🍿🍿🍿 and smidge of nut flavours.
Hint of vanilla...
But mainly you could tell it was a young, slightly oaked Chardonnay from Burgundy. It didn't have the aged complexities, but it was a fine example of a quality wine. Credible amounts of acidity! Med alcohol levels.
